A little background about my relationship with food:
I am a super lazy woman who is always hungry. Recently, I am guessing because I am exercising so much, I get hungry every hour! I am trying to eat less but everyday, I find myself munching, crunching and chewing. Damn, I need to stop.
But I have to eat when I am hungry because when I am hungry, I can’t think well and I get agitated easily. Everything and everyone annoy me. Like the smallest and trivial stuff! I can’t believe it either. One time in New York, it was unbearably cold and we were walking so much around Central Park. I became really moody. Later, after munching on a pretzel, I finally realized that I was actually starving… who is with me?!
A few days ago, I discovered a super easy, five-ingredient chicken recipe. It tasted so good plus it’s so healthy that I have to share them with you who are equally lazy like me! You’re welcome~ Hehe.
3 tbsp Curry Powder
1.5 cups / 1 can of Coconut Milk (Replaced this with Nice Coconut Milk)
3 Chicken Breasts
1/2 can of Salsa Sauce
Chop the onion. You can choose to slice the chicken or not.
Add the salsa sauce, chicken breasts and onion into the slow cooker. Mix and cook it low for 10 hours or high for 5 hours. Add the coconut milk last.
Sprinkled goji berries because I am recently addicted to them! I add them to everything. My energy balls, daily snacks etc.etc.
Bits and tips:
Make this at night before you sleep so it’s ready for you the next morning!
Add 1/2 head of medium cauliflower or serve with baked sweet potato or rice.
I love replacing rice with cauliflower because they are simply a healthier option.
